I’ve been experimenting, making yummy healthy, gluten free and vegan pancakes for pancake day. So here is my go at it;
1 Banana
1 Cup of Gluten free oats
3 tbsp of Chia Seeds
1 tbsp of baking powder
1/2 cup of dairy free milk
Cup of blue berries
Honey
on a low heat in a saucepan, pour in the blue berries with some honey and water. Keep an eye on it and stir every now and then during the whole process.
In a smoothie blender put in the banana, oats, chia seeds, baking powder and the milk and blend it all together. Ta dah! Gluten free and vegan pancake mix!
once you’ve cooked your lovely fluffy pancakes add the blueberry compote on top.
I know pancake day has been and gone, but there is no reason not to try these out! maybe try these out for your loved ones on valentines day.
