My Gluten & Dairy Free Fish Pie

Hello lovelies, with a lot of requests for a recipe when I posted on Instagram stories, I thought I would share the recipe – however there isn’t really any measurement and just made it up, and it was so delish!

Ingredients:

Filling

Garlic
Onion
Spring Onion
Fresh Chilli
Leeks
Butternut Squash
Fennel
Salmon
Cod
1 can of Coconut milk
175 ml White Wine
Dill

Pastry
Gluten Free Puff Pastry
1 Egg (for the egg wash if wanted or can do melted vegan butter)

Instructions:

  1. Chopped up the butternut squash into cubes and put in the oven for 30-45 minutes at 180*. Whilst thats cooking, in a pan fry off the garlic, onion, spring onion and chilli in olive oil. Let these soften.
  2. Take the puff pastry out of the fridge to get it to room temperature.
  3. Chop up the Leeks and Fennel and add to the pan. Let this sit until your butternut squash is done – so keep on a low heat, so your pan doesn’t over cook.
  4. add the butternut squash to the pan, with 175ml of white wine (perhaps pour yourself some whilst you are at it) and add the can of coconut milk.
  5. let this simmer and soak in for 5 minutes. (keep your oven on)
  6. when the vegetables look pretty much cooked, add a third or half to the tin/pie bowl of choice, depending how much there is. With each layer add some of the diced fish and then carry on the layered pattern.
  7. Finish the filling with salt, pepper and a sprinkle of dill.
  8. Roll out your pastry over the top of the tin to make sure the filling is covered. I chopped extra pieces off to fill the open areas and you can make it as decorative as you choose.
  9. finish with egg wash (whisked egg) or melted vegan butter over the top of the pastry.
  10. place in the over for 30-40 minutes!!!

DONE!!!

We had ours with steamed broccoli, carrots and mash! Enjoy and I hope you like it x

City Break To Bath, Somerset

I have been very fortunate to be able to have so many amazing trips around the world and this year I wanted to make an effort to document and share. A quick little help in hand, to share where we ate, stayed, other recommendations.

So starting off 2020, with what I got up to on New Years Eve! So last year myself, Laurie and our darling friends Sophie and Andy decided to get away. I always find New Years Eve very overrated having to DO something. I like to look at New Years Eve to do what ever you want, make it special. Even if you don’t want to do anything at all, get cosy on the sofa… maybe with a cheeky G&T! But yes we wanted to do something different, and that is when we came up with a little city break.

The Canary Gin Bar

So if you know a little about me, you would know this screamssss my name haha! I was introduced to this bar a few years back, when I was visiting my friend at Bath University. So this was a definite on my to do list whilst I was back, and would highly recommend. The most wonderful, bar down one of Bath’s little lanes. The interior is incredible, feeling like you’ve walked into a Wizard’s lair, with all is passions bubbling away. The atmosphere is incredible, so many amazing gins and the staff are incredible!

LETS EAT

Vino Vino Restaurant
For Dinner we booked Vino Vino and it was just what we needed. Vino Vino is known for of course wine but also cocktails and it’s sharing boards and tapas style plates, it was perfect for us four chatting away. Myself and Sophie are both Gluten intolerant and they were able to cater us with lots of lovely plates.

We went for our last few drinks at a bar, which I would’t recommend and so don’t really want to share it. But we had the most loveliest time and would recommend these places!!!

Gin Thursday 03| Strawberry & Pepper

Following on from using classic Beefeater Gin, I thought I would follow up with the Beefeater London Pink Gin. Beefeater is one of my favourite brands and it’s a more affordable gin! So Beefeater London Pink, has a numerous of botanicals, especially strawberries and to balance the sweetness with lemon peel to give it a sharp crisp taste to it and I thought to give a hint of warm spice and add a little pepper!

Gin Thursday 02 | Peach & Sour

Hello from Spain! In Spain our essentials are water, peaches, olive oil crisps and gin! I am not even kidding haha.

For this Gin Thursday, I thought I would share a simple summer twist on your classic G&T. One of my favourite and affordable Gin brands is Beefeater London, which has quite a refreshing subtle taste of liquorice and lemon peel.

Berlin 2018

Hello everyone,

I’m back!

I know it’s been a while but I will get more into what’s happened since I last posted over on another blog post which will be coming soon about finishing University, University life, how I dealt with juggling everything and still having a life, the different platforms I work on and finally the process I’ve been through with cancer. Hopefully this will be helpful to people who are going into University or finishing or just to share some positivity and inspiration to you guys.

Any way, so a couple of weeks ago, I surprised my boyfriend, Laurie with a trip to Berlin for his 22nd birthday! Both of us have never been and we were super excited! During this trip I started experimenting with creating Youtube videos/vlogging as its something I would love to get into, as it looks so much fun and I love watching other peoples videos as well. So please bare with the quality and skill for now, it’s something I need to practice, but super excited as now I have done a little Video for Berlin, I am getting the hang of it and planning for when I go to Spain.

Eating In With Amelia: Pesto Pesto

Happy Monday every body, so I have some blog posts up my sleeve and thought I would share a little food post on this fine Monday. A fresh beginning to the week and something you might want to try during the week and I hope you enjoy.

I personally think pesto is so underrated … especially when its fresh! fresh pesto sauce reminds me of oh the beautiful nights in my university house where my friend jess would be making the most awful high pitch scretchy noise with the mini food processor at 9pm in preparation for her pesto pasta…oh I miss that noise… haha!

Nearly the weekend and nearly Valentines day! Maybe surprise your loved ones or girls night with an easy delicious cocktail on us! (Mama Gin)

So as some of you may know, I am a partner of a company called Mama Gin, We are a Gin (surprise surprise) based mobile cocktail bar, available for parties, weddings, corporate and other events. We are based in Sussex/Brighton and Hove in the UK.
